You may want to sell dried banana chips.

You are left with the problem of wasting or utilizing the peels.

You would have waste heat from the chips process that could be used to dry the peels and the dry peels might release heat when burned in a furnace. You want to know how much fuel cost you could save.

So you would have to control the variables by weighing a ground sample of dried peel. You would have to use a bomb calorimeter charged with oxygen. The calorimeter would have to be calibrated with a known fuel with a characteristic heat of combustion.

You would also want to know how to utilize the ash.

It may be useful as fertilizer.

To the extent that you can utilize the peel you can avoid the cost of disposal of peel as process waste.
