You can get at SCSI-to-USB adapter/connector but it will cost as much as a new USB enabled scanner.
You can get a SCSI PCMCIA card but that will cost you about 1/2 or as much as the USB scanner, too.
Maybe it's time to upgrade your scanner.

I agree with Tall Paul, it's going to cost more than the scanner is worth.
But if you want to try it yourself (if you have the knowledge and the skills), the easiest and cheapest way is to buy an USB parallel printer port and do the adaptation from that to SCSI (if it's an 8 bit SCSI).
