This is a tough one. I strongly suspect it is a geonymic - a name derived from a place name. While I couldn't find a "Huereca", I did find Huercal! It is a municipality in the Almeria province of Spain.
So it is possible that Huereca is a geonymic formed from the Spanish region Huercal.
All references that had origins other than the US of people with the Huereca surname seems to come from either Spain or Mexico. So this is definitely a possibility.
