The major English language newspapers have jobs classified. I've provided the links below.
You are better off to be hired from outside the country. If you are considered a "local hire" by being hired in country, you might not get as good benefits. Typically housing is not provided to local hires.

even though you wont be doing anything illegal technically , there will be several factors against you , the least of which is the weather because temperatures climbs up in those months then in Ramadan it is shorter working hours so things slow down. Then government (& immigration) offices will be off for 3 to 4 days during Eid holiday , I mean what if you visa expires then have you thought about it (obviously airport does not close but that is for people who already got their papers). The other factor is that you are not the only candidate of offer , thousands of people are doing exactly this. Your plan might work better if you wait until November or October, which is generally the start of fiscal year & when they look for new recruit with new projects.

you should start buying the newspaper and search for job vacancies right after settling down in UAE, beside there are local web sites that asks for employees like Etisalat.or simply pick up the large enterprises and ask for HR and leave your resumes.
Good luck
