Kolache Filling Recipes?
Does anyone have any good recipes for kolache fillings? Last year I made walnut, cream cheese, blackberry, strawberry, and chocolate-cherry.....I hate prunes, apricots, and poppyseeds, so those wouldn't be an option.
I was thinking of a pistachio filling or something a little different than the usual fillings....

What about dates? As a youngster I hated dates. However, the past few years I have been baking all of my family's traditional holiday favorites. Many of the cookies call for dates and they are delicious!
My first choice would be the fruit flavors you have already mentioned. I also like the savory idea.
I bake a huge cookie that was from a recipe of my grandmother's. The filling is raisin. I'm not crazy about the raisin middle, unless I have a good cup of coffee for dunking!
Again, happy holidays! Have fun baking! Sometimes it seems like such a chore, but I love to keep with the holiday traditions!

Dear Mose's longtime friend:
Beets.
Although, the pistachio ones sound delightful. Perhaps you can mix some honey into the mixture to hold the pistachios together. Semi-sweet chocolate would also be an option, although, you would have to make sure that Cooper the dog doesn't get into the bag again...as per your question the other day. Try mixing some cream cheese and fruit, but avoid calling it "kolache twisters" because it sounds too much like the tropicana beverages in the tornado bottles.

Here is one for jam filling
JAM KOLACHES
1/2 cup butter, softened
1 small package (3-ounces) cream cheese, softened
1 1/4 cups all-purpose flour
1/4 cup strawberry jam
1/4 cup confectioners' sugar
Cream butter and cream cheese in a medium mixing bowl; beat until fluffy. Add flour, then mix well.
Roll dough to 1/8-inch thickness on a lightly floured surface; cut with a 2-inch round cutter. Place 2 inches apart on lightly greased cookie sheet. Spoon 1/4 teaspoon of the jam on each cookie; fold opposite sides together slightly overlapping edges.
Bake at 375°F for 15 minutes.
Remove to wire racks to cool; sprinkle with confectioners' sugar.
Makes about 2 dozen cookies.

You can actually use any number of things. My husband's belief is that true Kolaches are only filled with fruit, while my daughter is a sausage and cheese fanatic.
I personally like pineapple, but it's very hard to find anything with a pineapple filling.
You could try white chocolate/macadamia, pineapple, cream cheese with chives or whatever.

Kolaczki For the dough: 1 pound cream cheese, softened 4 1/2 cups all-purpose flour 1 pound butter or margarine (softened) 2 egg whites For the filling (select one or more of the following): raspberry jam strawberry jam apricot jam nut filling (recipe below) mix cream cheese and butter except soft. Add flour step by step, unless a gentle dough ball has fashioned. Duvet and kick back overnight. Preheat oven to 350 F. Roll out small sections of dough. (hold last dough chilled.) cut dough into rectangles roughly 1 1/2 x 2 inches. Location filling on one nook of the pastry and roll it up. Seal the brink with egg white. Alternately, cut dough into squares, position filling in middle and deliver opposite corners collectively within the middle of the filling. Bake for 12 to 15 minutes. Nut Filling 1 pound ground walnuts 2 cups sugar water mix nuts and sugar. Steadily add water except combination forms a stiff paste.

how about a spinach/cheese type filling? i think it would be pretty savory. i would wash the pastry with egg to make it very shiney.
