Meal Ideas Not Using A Stove?

I currently do not have a stove, all I have is an electric skillet and a microwave. I need meal ideas that I can cook using these items. I have been making Hamburger Helpers and Complete Meals but my family is getting burned out on these items. Just want some simple kid friendly meal ideas.

    You can use your electric skillet like a deep frier and make fried chicken, you can make chili in it, chicken and rice casseroles, macaroni and cheese, BBQ chicken or pork chops, skillet lasagna - that is all I can think of off hand.

    You can make stir-frys in the electric skillet. Many crock pot recipes can be made in an electric skillet.

    Really, just combine a meat, a starch, veggies and liquid in the skillet and let it simmer until done.

    Examples: Pork chops, sweet potatoes, shredded cabbage, chicken broth and apple juice.

    Chicken breasts, potatoes (peeled & diced) peas, carrots, and a cream sauce & poultry seasoning, or two cans of cream of chicken soup.

    Ground beef, rice or elbow macaroni, can of tomato puree, zucchini, garlic & onion. Add Italian seasoning if desired.

    Just be sure to add some extra water to cook pasta or rice in there. keep an eye and add more if it starts to get dry.

    As for the microwave, get roasting bags and do a beef chuck roast with potatoes & carrots, or a pork roast with same, or even fish does well in the roasting bag/microwave method. An you can make tuna casserole in the microwave too.

    You will be able to cook MANY more things if you add a little hotplate to your equipment:

    You can then boil spaghetti noodles while you make sauce in the frypan and warm up some garlic bread in the microwave.

    How about chicken parts browned then simmered in mushroom soup in the frying pan served with rice (hotplate or microwave) and peas (microwave or hotplate)?

    Do you have an electric waffle iron? You can make great grilled sandwiches on a waffle iron...grilled cheese is amazing cooked that way.

    Thrift stores and garage sales are FULL of those little George Foreman lean machines--that could increase your ability to cook quite a bit because along with meats, you can use those things to roast vegetables (gives them a great flavor).

    If you are stove-less due to economics right now, you might call the Salvation Army (please don't feel insulted! that's what they DO!) and see what they can do for you--they might have a good reconditioned stove they would deliver and install for free.

    pork chop skillet

    Pork chops

    potatoes peeled and sliced 1 inch thick

    onion peeled and sliced

    1 package dry onion soup mix

    using your electric skillet, brown pork chops in a little oil.Sprinkle 1/2 soup mix onto chops. Place onion ringlets onto chops and add potatoes on top of the onions. Sprinkle with remaining soup mix. add water to pan up to the potatoes. cover and cook on med 1 hour. they will be very tender and yummy. serve with salad and apple sauce

    I have the same way to cook...the other two answers are right on...I also make meat loaf, pot roast with potatoes-onions-carrots...bake bisquits & cornbread on low heat...spaghetti sauce...all in the skillet...in the micro-wave...I do mac & cheese....all my pastas....veggies...& just about any thing else you can cook on a stove...good luck...

    STUFFED PEPPERS (MICROWAVE)

    8 med. bell peppers

    1 lb. pork sausage

    1 1/2 c. onion, chopped

    1/2 lb. fresh mushrooms, chopped

    1 (6 oz.) pkg. herb seasoned stuffing mix

    1 (8 oz.) carton sour cream

    2 c. fresh tomato, chopped

    1 (10 1/2 oz.) can tomato soup

    1/4 c. water

    2 tsp. Mrs. Dash seasoning

    Cut tops off green peppers and remove seeds; set aside. Crumble sausage into 2 1/2 quart microwave casserole dish. Add chopped onion and mushrooms and stir well. Cover tightly with plastic wrap; fold back a small edge of plastic wrap to allow steam to escape.

    Microwave on high 7 to 8 minutes or until sausage is browned; stirring once. Drain well; set aside. Add stuffing mix, including the seasoning packet, and sour cream, stir well. Add tomato and stir gently.

    Stuff peppers with sausage mixture and place in a lightly greased 12x8x2 inch baking dish. Combine remaining ingredients; mix well and pour over peppers. Cover tightly with plastic wrap; fold back small edge for steam to escape. Microwave on high 20 to 22 minutes; turning dish a half turn after 10 minutes.

    MICROWAVE MUSHROOM BURGERS

    1 lb. lean ground beef

    1 (4 oz.) can sliced mushrooms

    3 tbsp. finely chopped onion

    3 tbsp. finely chopped chives

    1 tsp. garlic salt

    Dash black pepper

    1 egg

    2 tbsp. butter

    Hamburger buns, for serving

    Lettuce, tomatoes, pepper rings for garnish

    In a microwave dish, combine mushrooms, onions, chives, black pepper and garlic salt. Microwave at MEDIUM power for 3 minutes. Let stand 3 minutes for flavors to blend. Reserve some mushrooms for garnish.

    Combine beef, mushroom mixture and egg. Shape mixture into 4 even patties. Place onto micro-safe rack or pan. Microwave at HIGH power for about 2 minutes. Let stand for 2 minutes. Turn patties over. Microwave on other side for 1 1/2 to 2 minutes or until done to your liking. Serve on hot buns. Garnish with reserved mushrooms, tomato slices, pepper rings or other condiments of your choice.

    The first meal that came to mind when you mentioned a crock pot and microwave was slow cooked barbecue chicken and rice. Just chop up some chicken and add your favorite barbecue sauce and seasonings. Let is cook at a low temperature for several hours. All you then have to do is cook up some white rice using the microwave. It usually takes about twenty minutes. Make sure to stir at five minute increments to get the fluffiest rice possible. A canned vegetable warmed in the microwave would complete the meal. Another idea would be a roast with tons of vegetables. This can also be prepared in the crock pot. Throw in fresh veggies with your roast. A couple cans of diced tomatoes will provide liquid to keep the meat from drying out. Chicken or beef stock should also be added. Carrots, potatoes, and green beans are my three favorite vegetables to have with a roast. Believe it or not, macaroni and cheese can also be prepared in the crock pot. Plenty of recipes are available on the internet. A tuna salad sandwich would be a great addition to the meal. You could also make some hot dogs or grill some sausages. Corned beef, cabbage, and potatoes is another crock pot staple. My family has it quite often and it couldn't be simpler to prepare. Toss it all in the pot and let it cook six to eight hours. Put your corned beef in about an hour before eating (if you are using the canned kind.) This prevents it from falling apart and turning to mush. Hopefully this adds some variety to your dinner menu. These are my family's favorites and I'm sure they will become some of yours too!
