Any fudge recipes without these ingredients?
In response to an answer of mine to someone else's question on baking cookies and making fudge, a couple of kind people have sent me a fudge recipe.
So I thought I'd expand it a bit and ask the specific question: do any of you have good (tasty, good consistency) fudge recipes that do NOT contain any of the following ingredients (which I cannot find over here)?
- unsweetened baker's chocolate
- corn syrup
- evaporated milk
- marshmallow cream

Other ingredient that's unfortunately extremely hard -- almost impossible -- to find here (although I've found an Italian producer online, who only sells by 5 or 10kg bags): pecans. But I can always try with walnuts or hazelnuts, I imagine.
Another thing: if you mention packages of ingredients in the recipe, like bags or cans, please tell me the exact size (weight or volume), because things might be different over here and I have to work with what is available. Thanks! :-)

Mine is
bag of semi sweet chocolate chips 16oz
can of sweeten condensed milk 14oz
and nuts (optional)
melt chocolate in a double broiler
once melted add condensed milk
quickly spread in an 8 inch square pan
sprinkle nuts on top

Here are a few good ones:
Hershey’s Chocolate Fudge
Ingredients: 3 cup sugar
2/3 cup Hershey's cocoa
1/4 t salt
1-1/2 cup whole milk
4 T spoon butter
1 t sprron vanilla
1 cup chopped pecans (walnuts or other nuts) Cooking Instructions: Items needed: One large spoon, one strong arm and a comfortable chair.
Mix sugar cocoa & salt in 3 quart pan (or larger). Add milk, heat to boiling, stirring occasionally. Lower heat to medium. Cook to soft ball stage, stirring occasionally (drop small amount into cup of cold water, when you can pick it up and can roll it around in fingers it is ready) or you can use a candy thermometer
Fill sink with about three inches of cold water. When fudge is cooked to soft ball stage, add butter and stir in. Set pan in sink of cold water, stirring occasionally until cool enough to put finger in. Remove pan from water, add vanilla and beat until smooth and ready for butter flat pan. Add pecans just before pouring into pan.
When beating it you can tell it is almost ready when it starts to have satin finish. from this point need to work fast so it will not get too stiff to pour into pan.
This one is the best!It's very easy to make, takes 5 minutes!
* 1 pound confectioner's sugar (or 4 cups)
* 1 cup cocoa
* 1/2 stick margarine
plus 1/2 c milk
Put all ingredients into a sauce pot and on medium low heat.
Mix well, and keep mixing to avoid scorching.
As you are mixing, add about 1/2 cup to 1 cup milk to liquefy the sugar and cocoa.
Don't add too much milk or the fudge won't set, but if you don't add enough the fudge won't be creamy.
You have to use your best judgement here.
When everything has melted and become mixed together, it should stir and pour freely, but not be runny.
Then add:
* 1 cup walnuts for walnut fudge
* OR 1 cup peanut butter for peanut butter fudge
After it's all mixed up really well, pour into a lightly buttered/greased pan.
Flatten, and refrigerate for a couple hours. Enjoy!
