When making peanut brittle and shelling raw peanuts do you have to remove the skin?
Some of the peanuts come right out of it and some don't. Does it matter? I'm making this for the first time and with all the time it's going to take I want it to be right.

No, removal is not necessary.
Think of the stuff you buy at the stores or candy shops, it never has the skin removed.

I would say that you don't really have to, but if you don't I would think that as you are cooking it the skins will fall off and then you would have skins in the brittle. I would take the extra time to take the skins off. You could also roast the peanuts in the oven for a bit to get rid of the raw taste. I hope it turns out well for you..

No...when in the heating process it will prevent the skins from separating from the peanut...so leave the skins. I made my peanut brittle with raw spanish peanuts...no shelling necessary...just pour in the bag. They have skins as well.

Take the skin off lest they fall out of the brittle.

I would say yes, you dont want the shell floating around in your brittle. I like my candies to be free of impurities. However I doubt it effects taste, after all, the shell is flavorless aside from the salt on salted peanuts.
