Ideas for some dipping sauces for fruit sushi?

I'll be making fruit sushi with sweetened rice filled with kiwi, pineapple and mango not all in the same piece. I'd thought of mimicking the pickled ginger color by making a sweet ruby grapefruit sauce and maybe some kind of mint sauce from fresh mint not mint jelly to mimic the wasabi. This is for an appetizer party and the fruit sushi will be rolled in toasted coconut or sesame seeds , no seaweed and served as a dessert. Regular sushi served as a part of the main menu of appetizers.

Well, you'd want it to look like soy sauce, so you could make a sauce using dates then strain it, and that would give the desired look.
