What should I make for dinner?

It's just for my family at home tonight. I can't think of anything good. I plan on stopping by the store on my way home. Any ideas or recipes would be great.

Update:

Thanks! Have a great weekend!!

    ********Meat filled Crescent ring:

    Ingredients:

    2 packages crescent rolls

    1 lb. ground beef

    1 envelope taco seasoning

    1 cup grated cheddar cheese

    shredded lettuce

    chopped tomatoes

one bunch of green onions, chopped

    1 diced avocado

    1 cup sour cream

    salsa

    Method:

Brown ground beef and follow taco seasoning directions on back of package.

Add the cheese and place aside for the time being.

Unroll the two packages of crescent roll.

On a cookie sheet, place the crescent roll wedges in a circle, wide side of wedge towards the middle, pointed end towards the outside.

Place the ground beef on the crescent rolls and wrap the pointed ends of the rolls around the meat mixture, so that it forms a ring.

Bake at 375 F for approximately 12 minutes.

When baked remove from oven and place on a large platter.

On the inside of the ring place lettuce, tomatoes, onions, and avocados.

Dollop sour cream and salsa over all.

Cut into wedges and serve warm.

******* CHICKEN CORDON BLEU IN PASTRY

1 tub 8 oz refrigerated crescent rolls

¼ cup spread able chive and onion cream cheese

4 thin slices of deli ham

4 cooked boneless skinless chicken breast halves (4 oz each)

    4 slices Swiss Cheese

On an un-greased baking sheet, separate dough into four rectangles; seal perforations. Spread 1 tablespoon cream cheese lengthwise down the center of the rectangle. Place ham widthwise over the dough. Arrange chicken in center of each rectangle. Wrap ham around chicken. At each end, pinch the dough together around chicken, forming points.

Bake at 375 for 15 minutes. Top with slice of Swiss cheese; bake 5 minutes longer or until cheese is melted and pastry is golden brown.

    ********OLD FASHIONED "BISCUIT TACOS"

    2 cans biscuits

    8 tbsp. flour

Open biscuits and press 2 biscuits together. Roll out in flour to 3/4 inch diameter. There should be 10 biscuits ready to fill.

    FILLING:

    2 lbs. ground beef

    1/2 c. chopped onion

    2 c. shredded cheddar cheese

    Salt & pepper

Brown ground beef and onion, drain. Reduce heat. Add cheese to beef and stir until melted. Remove from heat. Heat 2 cups shortening. Fill biscuit shells with meat and cheese mixture. Fold in half moon and pinch together. Drop in hot grease and brown on each side.

    SALAD MIXTURE:

    1/2 head lettuce

    1 tomato, diced

6 to 8 green onions, chopped (stems & all)

Toss salad mixture. Open biscuit taco and fill with salad mixture and favorite taco sauce. Serves 10. Absolutely delicious! Eat and enjoy!

  • Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.

    Meatloaf

    3 pounds ground beef

    3 large eggs

1/2 to 3/4 cup Italian style bread crumbs

1 packet Lipton's Onion or Beefy Onion Soup Mix

1 can sliced mushrooms - drained

    1/2 cup sliced black olives

    2 tablespoons BBQ sauce

    1 tablespoon A-1 sauce

    1/2 cup salsa

1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

take out and spread a can of no bean chili on top of the pork chops, put back into the oven until heated through..

take out and a put shredded cheese on top, and back into the oven until melted...my family loves this...(I made them last night, with green salad, potatoes, and french bread)

How about a chicken pot pie topped with biscuits?

    You'll need:

    - Chicken leg quarters (or short cut by getting a precooked chicken in the grocery deli section)

    - Two cans of chicken or vegetable broth

    - Onion

    - Carrots

    - Frozen peas

    - 2 tablespoons of flour (or cornstarch)

    - Package of frozen biscuits - not canned. (I like White Lilly)

Get a pack of chicken leg quarters and bake them in the oven until done.

I use a dutch oven that can go from stove top to oven.

While the chicken is baking, chop up onions and carrots and sautee until soft. Throw in some frozen peas. (You can also add whatever veggies you like)

Add a couple of cans of broth (chicken or vegetable). Stir in a tablespoon or two of flour and mix it in well.

When the chicken is done. Remove the skin. Pull the meat off the bones and add the meat to your veggies & broth.

Place frozen biscuits (no need to bake them first) straight out of the package on top of your chicken/veggie mix and pop it into the oven for about 20-30 mins. It's done when the biscuits have cooked on top.
