If you leave a plant to seed... are all the resulting seeds male or female (or both)??

Neither! Seeds are usually neutral - plants develop flowers in each of which there is an ovary that contains an ovule (the female part and equivalent to an animal's egg) and stamens which carry pollen (the male part). Insects or the wind carry pollen to a tube called the stigma and this fertilises the ovule to form a new seed and the cycle continues. A few primitive plants do produce male and female individuals but their seeds appear to be identical at first.
