Whatever you declare for withholding with your employer will only affect how much they withhold from your paycheck. If you declare zero or one exemptions then more will be withheld but you can get most it back when you file for taxes.

Bottom line is that at the end of the year you file as head of household (qualifying, of course) and if your employer took too much out, you get it back. If he didn't take it out and you don't qualify, then you'd have to pay it.
