A Sous Chef is an Assistant Chef. Their duties include:
-Supervising Line Cooks, prep cooks and dishwashers.
-Chefs usually work during the day shift. Sometimes, but not always, Sous Chefs take care of the night shift.
-Sous Chefs assist the Chef in purchasing food and supplies, inventory, cost control, writing schedules, creating menus and daily specials.
-Daily duties include writing prep lists and supervising staff in food production, food safety and sanitation.
-Sous Chefs also assist the Line Cooks during peak business hours and will perform closing duties at the end of the night. They will also take over for the Chef in his absence.

Responsible for assisting the executive chef in the planning and execution of daily food production. Assist in daily kitchen production and is responsible for assigning and delegating the work of the food service personnel including the training of the kitchen staff in food preparation, customer service, food presentation, kitchen safety and sanitation.
