I think it means "Not Otherwise Specified"

Well, the recipe comes from someone in India, so my assumption is that it's more or less translated poorly. I believe Nos just refers to the quantity and is an abbreviation for "Numbers". Of course, we wouldn't write a recipe with "1 number tomato" or "2 number potato" but english is probably not the first language of the person that wrote it. I do believe that it just signifies the quantity to be used.

Source(s): If you look closely, you'll notice that it's "no" when it's 1 of something and "nos" when it's more then one. This clearly indicates that "nos" is plural for "no."

"nos" is being used as an abbreviation for "numbers" or simply speaking it depicts quantity.I know it doesnt make sense but thats the way it works where this recipe comes from.

    Cheers!
