Breakfast:
Monkey Bread
18 frozen dinner rolls
1 3/4 ounces butterscotch pudding mix (NOT Instant)
1/4 cup sugar
1/2 cup chopped nuts
1/2 teaspoon cinnamon
1/4 cup margarine
1/2 cup brown sugar
--Arrange rolls into a greased bundt pan then sprinkle with pudding. Mix cinnamon, sugar and nuts and sprinkle on rolls and pudding. Melt margarine and brown sugar in small saucepan on stovetop. Pour over rolls. Cover loosely with saran wrap and let stand overnight. Rolls will rise. Next morning, remove palstic wrap and Preheat oven to 350 degrees. Bake for 30 minutes and then remove from oven. Turn onto platter and enjoy.
Lunch:
Cheesy Garlic Pull Apart Bread
2 tablespoons butter
3 garlic cloves, minced
2 teaspoons dried parsley
1/4 teaspoon garlic powder
1 (8 ounce) can biscuits (10 biscuits)
2 cups mozzarella cheese (can use less)
2 tablespoons parmesan cheese, grated
pizza sauce
--Heat oven to 425 degrees. Melt butter in small bowl. Stir garlic, parsley and garlic powder into butter. Pour butter mixture into pan. Cut biscuits into 4 sections each. Place in pan. Top with both cheeses. Bake for 10-15 minutes until biscuits are cooked through. Invert upside down onto a plate. (I take a knife around the edges of pan to release stuck on cheese before inverting to plate). Serve with warm pizza sauce.
Dinner:
Black Bean and Chicken Enchiladas
3/4 lb boneless skinless chicken breasts, cooked and shredded
3 slices bacon
2 garlic cloves, minced
1 1/2 cups picante sauce, divided
1 (16 ounce) can black beans, undrained
1/2 cup bell peppers, chopped (green or red)
1 teaspoon cumin
1/4 teaspoon salt
1/2 cup green onions, sliced
12 (6 inch) flour tortillas
1 1/2 cups monterey jack cheese, shredded
--In a skillet, cook bacon until crisp. Drain on a paper towel and crumble. Pour off all but 2 tablespoons of bacon fat from the skillet. Add chicken and garlic to the skillet and cook until garlic is fragrant. Stir in 1/2 cup picante sauce, black beans, chopped pepper, cumin, and salt. Simmer until thickened, about 8 minutes, stirring occasionally. Stir in green onions and bacon. Spoon 1/4 cup bean mixture down center of each tortilla and top with 1 tablespoon cheese. Roll up and place seam-side down in a lightly greased 9x13 inch baking dish. Spoon the remaining picante sauce evenly over enchiladas. Top with remaining cheese. Bake at 350 degrees for 25 minutes.
Dessert:
Apple French Bread Bake
6 tablespoons butter
8 ounces French bread, loaf (with crust)
1 1/2 cups brown sugar, packed
1 cup water
1 teaspoon cinnamon
2 tablespoons butter
2 large apples
6 ounces cream cheese, 1/2 inch cubes
1 cup walnuts, chopped
whipped cream or vanilla ice cream
--Preheat oven to 350 degrees. Cut bread into 3/4 inch cubes. Place 6 tbsp butter into bottom of a large baking pan. Melt in oven. Add bread cubes and toss to coat evenly. Bake bread until crisp and slightly browned, stirring occasionally (about 20 minutes). Remove bread from oven and raise temp to 400 degrees. Simmer brown sugar, water, and cinnamon in a saucepan until the sugar is dissolved and it is syrupy (about 5 minutes). Add 2 tbsp butter to mixture while hot and stir until melted. Peel and core apples and cut into a small dice. Combine apples, bread cubes, cream cheese cubes, and walnuts. Pour syrup over all and toss to coat. Butter a 9x13 inch dish well. Pour mixture into buttered dish and spread evenly. Bake in 400 degree oven for 40 minutes. If browning too quickly, loosely cover with aluminum foil. Serve warm topped with whipped cream or ice cream!
Ethnic:
Chicken Fried Rice (Chinese)
3 chicken breasts (in bite size pieces)
1/4 cup onions (chopped)
1 large carrot (cubed)
1/4 cup green onions (chopped)
4 cups cooked rice
2 1/2 teaspoons salt
4 1/2 tablespoons butter (softened)
1/2 teaspoon oil
2 1/2 teaspoons sesame seeds
1/2 teaspoon pepper
1/4 cup soy sauce
2 eggs
--Heat wok to medium high heat. Spray with cooking spray and scramble the eggs. Once done, chop and set aside. Add oil to wok and sauté chicken, onion, green onion and carrots until done. Return eggs to wok and mix well. Break off chunks of steamed rice and mix well with other ingredients. Add sesame seeds, salt, and pepper. Stir in butter and soy sauce.
