Wash and cut all your veggies and submerge them in a big bowl water and keep them in the fridge until you are ready to put them on the platter.

They will stay crisp for a week or more using this method.

Carrots and Celery sticks are usually on every Vegetable Platter, so I keep them both in a water bath, just to cover the tops. Broccoli and Cherry Tomatoes hold pretty well on their own, but cut cucumbers don't last so long (about 3 days, tops) A great tip for broccoli, I have found that blanching it makes it taste better alone or with you dip of choice, it looks brighter and greener on your platter and it holds longer in the frig! Zuchinni and Squash are very delicate, I would save those and the cucumbers to cut up the very day your Platter will be served. I hope this helps you out!

Depending upon the vegetable used, i find it better to keep things such as carrots and celery in a container of water- maybe 4 days. i wouldnt keep things such as cucumbers cut for more than a couple days for the h20 in the cucmbers will extract and turn them soggy. If at all possible i would cut them to service, or just the day of.

i have found that if the are all preped and then rinsed in cool water and drained not dried then put into a plastic container with a lid keeps then quite nice for up to 3 to 5 daysjust make sure they arenot dripping wet just a very little water left on then . if water collects into the container just pour it off as this would be tooo!!!! much water. he he good luck!
