Wild Horses, but that's a really obvious overdone cover.
How about "I Am Waiting"? Covers of lesser-known songs are usually the best.

From a lot of bands I have heard that the best songs to cover are the more obscure ones, so if you can look over your rolling stones album collection and find some stuff that isn't that well known that would be a good start.
