    1)Braised Chicken Feet in Fragrant Sauce

    ------------------------------------------

    Ingredients

    500g chicken feet

    1 tbsp salted black beans, coarsely chopped

    5 bird’s eye chillies, sliced thinly

    1 red chilli, sliced

    1 tbsp chopped garlic

    3–4 tbsp oil

    1 cup water or just enough

    Enough oil for deep-frying

    (A):

    2 tbsp light soy sauce

    1 tbsp dark soy sauce

    Sauce (B):

    2 tbsp oyster sauce

    2 tbsp light soy sauce

    1 tbsp dark soy sauce

    1/2 tsp salt to taste

    1 tsp sugar or to taste

    1 tsp chicken stock granules

    Method

    Chop each chicken feet into two and marinate with (A) for 30–40 minutes. Heat enough oil in a wok and deep-fry the chicken feet until golden brown. Remove, drain and plunge them into a basin of cold water. Leave submerged in the cold water until they puff up. Remove the chicken feet and drain well in a colander.

    Heat oil in a wok and fry chopped garlic, black beans and bird’s eye chillies and red chilli until fragrant. Put in the chicken feet. Fry until well combined.

    Add (B) and continue to fry for a while then pour in just enough water. Bring to a boil then reduce the heat, cover and simmer until chicken feet turn tender and the gravy turns thick and dry. Dish out into several individual sauce plates and put into a steamer to steam for an extra 10 minutes before serving.

    This dish can either be served with rice or as a dim sum item

    2. Hot & Sour Chicken Feet Salad - Thai Food

    Or Glass Chicken Feet

    Ingredient

    300 gm boneless chicken feet (can buy from Chong Pang Market)

    100 gm big onion (cut strips)

    4 small onion (cut slices)

    Seasoning

    3 tbsp green lemon juice

    2 tbsp sugar

    2 tbsp fish sauce

    6 chilli padi (chopped)

    Garnishing

    1 stalk of parsley (cut finely)

    some ice-berg lettuce (cut into strips)

    2 red chillies (cut into strips)

    Method

    Scald the chicken feet with boiling water, cool with cold water, then soak in ice water for 20 mins. Drain off water, add in big onion, small onion and seasonings. Mix well, Garnish with parsley, lettuce & chilli strip

    Easy Sweet & Spicy Chicken Feet

    lbs chicken feet

    2 (12 ounce) cans Coke

    2 tablespoons sugar

    2 tablespoons soy sauce

    2 tablespoons sambal oelek chili-garlic sauce (or more)

    Put all ingredients except the feet in a wide bottomed pot. Mix well.

    Add the chicken feet.

    Cover pot and cook over medium-low fire for 3 hours or so. This will soften the feet real good that you can easily suck the meat off the bones.

    Remove the cover of the pot and cook over medium heat until the liquid turns into a sauce

    Delicious Chicken Feet . 1 batch 1¾ hours 5 min prep Change to: batch US Metric 12 chicken feet, declawed and skinned 3 tablespoons dark soy sauce 2 tablespoons rice wine 3 slices ginger 3 green onions 1 tablespoon barbecue sauce 1 teaspoon sugar star anise 1 piece orange rind 1/4 teaspoon pepper 1 pint water Combine all ingredients and simmer for 1 1/2 hours.

    Yes, Adobo Filipino style, or BBQ.

    For adobo, just substitute chicken feet for any of teh adobo recipes you will find on the internet.

    For BBQ, you have to boil the chicken feet (claws chopped off) for 20 minutes. Brush with sweet, sticky and spicy BBQ sauce. I like to add banana catsup (or tomato catsup) to regular BBQ sauce, then Aunt Jemima Maple Syrup to sweeten and thicken.

    Broil or grill the chicken feet, brushing again while cooking.

    barbecue- termed adidas in the philippines

    boil the chicken feet, scales, nails removed

    marinate in lemon, soy sauce, garlic and pepper

    grill over coal

    serve with a vinegar, onion, garlic and hot pepper dip
