I need a recipe for Chicken Croquettes, without onion in it?

    I like this one because it's oven fried and less fattening...and not an onion in site. (and btw, he's absent...I heard from my sister's boyfriend's brother's girlfriend's nephew that he's home eating these!)

    These chicken croquettes need to chill for at least 2 hours before cooking.

    INGREDIENTS:

    5 tablespoons butter or margarine, divided

    3 tablespoons flour

    1/2 cup milk

    1/2 cup chicken broth

    2 cups finely chopped cooked chicken

    1 1/4 cups fine dry bread crumbs, divided

    3 tablespoons fresh chopped parsley or 1 tablespoon dried parsley flakes

    1/4 teaspoon salt

    2 eggs, lightly beaten

    1/4 cup grated Parmesan cheese

    Directions for chicken croquettes

    In a medium saucepan, melt 3 tablespoons of the butter or margarine over medium heat. Add flour and cook, stirring, for 1 to 2 minutes without browning. Gradually whisk in milk and broth; cook, stirring constantly, until smooth and thickened.

    Remove from heat; let cool 5 to 10 minutes. In large bowl, combine chicken, 1 cup bread crumbs, parsley, salt and eggs. Mix well. Pour in sauce, blend well. Cover and chill for about 2 hours. Preheat oven to 350°. Combine Parmesan cheese and remaining 1/4 cup bread crumbs in a shallow dish. Shape chicken croquettes mixture into 2 1/2-inch balls, then roll to form oval shapes; makes about 8. Roll shaped croquettes in bread crumb mixture. Arrange in a greased 13x9x2-inch baking dish. Melt remaining 2 tablespoons of butter and drizzle over chicken croquettes. Bake chicken croquettes 30 minutes until golden brown.

    INGREDIENTS

    1 (10.75 ounce) can condensed cream of chicken soup

    1 1/2 cups finely chopped, cooked chicken meat

    1/4 cup Italian-style dry bread crumbs

    2 tablespoons minced celery

    1/4 teaspoon poultry seasoning

    1 tablespoon shortening

    1/2 cup milk

    1/8 tablespoon poultry seasoning

    1/2 cup Italian-style dry bread crumbs, for rolling

    DIRECTIONS

    Combine 1/3 cup of the soup, chicken, bread crumbs, celery, onion and 1/4 teaspoon poultry seasoning. Mix well and shape into 6 croquettes (I make patties). Chill in refrigerator for about 1 hour.

    Remove croquettes from refrigerator and roll in additional bread crumbs. In a large skillet, melt 1 to 2 tablespoons shortening. Brown the croquettes in the shortening. Meanwhile, in a small saucepan, combine the remaining soup, milk and 1/8 teaspoon poultry seasoning. Heat over low, stirring occasionally. Serve sauce over croquettes.

    I have no idea but I laughed out loud with your Bueller reference....I can picture that teacher in the movie saying that. That quote is right up there with "one time at band camp"!!

    Take a recipe with onions and then leave the onions out

    just substitute onion powder or leave onion out completely of any recipe you already have.

    Why don't you just leave the onion out? Or substitute with garlic or something else that you do like?
