    Cantonese Rice Salad

    Ingredients:

    3 tablespoons soy sauce

    1 tablespoon sesame oil

    1 tablespoon lemon juice

    ½ teaspoon superfine (caster) sugar

    ¼ teaspoon ground black pepper

    2 teaspoons grated fresh ginger

    1 clove garlic—minced (crushed)

    1 cup long grain rice—cooked and left to cool

    ½ red pepper (capsicum)—diced

    ½ green pepper (capsicum)—diced

    1 scallion (spring onion)—thinly sliced on the diagonal

    4 button mushrooms—halved and thinly sliced

    1/3 cup green peas

    ½ cup roasted cashews

    Method:

    MIX together the soy sauce, sesame oil, lemon juice, sugar, pepper, garlic and ginger in a small bowl. PLACE the remaining ingredients in a large bowl, drizzle the dressing on top, and toss everything together until well combined.

    Tip: You can make this rice salad in advance and store, covered, in the refrigerator—the flavors will improve over time.

    Variation: Add some cold cooked shrimp or chicken to create a main meal.

    Do you want 1 cup of rice when it is done cooking? Or are you asking how to cook 1 cup of dried rice?

    Either way, most types of rice are made using 2 parts water to 1 part rice. Put them in a sauce pan and bring to a boil. Reduce the heat to simmering and put a lid on it for 20 minutes. Do not lift the lid or stir or do anything. That is the secret to perfect rice.

    Rice increases in volume about 3 times when cooked. So, for exactly 1 cup of cooked rice, you will need 1/3 cup of rice and 2/3 cup of water.

    The amount of water depends on the type of rice you have. I usually use white rice, medium grain, and if I cook a cup of rice, ,I use around a cup and a half of water.

    Jasmine rice needs a cup of rice to 2 cups of water...

    So that being said, pour the cup and a half of water and a tablespoon of olive oil on medium-high heat, wait until it boils to add a sprinke of salt and the cup of rice. Turn down the heat to low when almost all the water is absorbed and turn the rice once. Cover, and let it cook for about 20 to 25 minutes.

    Oh! and one more thing. Should you rinse the rice? That really isn't necessary anymore..It depends on the rice you have. Nowadays, rice comes rinsed already. Plus, they include extra nutrients on it, so if you rinse it it will lose all the nutrients.

    first and foremost, wash the rice before cooking. then add 1.5 to 2 cups of water to the 1 cup of rice. cook on the stove top. let it reach a boil and then bring the heat down and let it simmer the rest of the way through. be sure to keep the lid on. the amount of water will and cooking time will differ depending on the type of rice.

    Add 1/2 teaspoon salt to two cups of water. Bring to a boil. Add one cup rice and stir. Return to boil. Reduce heat to very low. Cover and cook for approximately 20 minutes. Remove from heat and serve.

    put cup of rice in a pot and just add enough water to cover it. cook with the lid on for about 20 minutes or until water is gone-try not to life lid to often, it will screw up the rice. fluff it up and enjoy!

    Boil in 2 cups of water then simmer until water is ansorbed and rice is soft.

    instead of using water cook it in chicken or vegetable stock...loads of flavor.
