I would not keep it in the fridge for even 24 hours, unless the salmon was cured or smoked. If it is totally raw salmon, no more than 12 hours, especially because it is touching dream cheese.

Would you buy sushi that had been cut at the restaurant the day before?

A bagel with smoked salmon and cream cheese could stay in the fridge 3 days and still be good. The sushi rice is vinegared, so it should be OK. The nori (seaweed) will be a bit soggy, but will still be edible.

The basic discernible difference will be in the texture of the rice. The starches will change with the temperature. Let is sit out for an hour to relax the rice.

    How Long Does Sushi Last

No, you should definitely not eat it. You should really only eat sushi the day you buy it , and the day after. If you have sushi with avocado in it, there is a simple test. If the avocado is brown, dont eat it. Anyway, I would say definitely NOT.

If you put it in the fridge right away AND you didn't keep it at room temperature for long, it'll be good for a few days.

You will prob be OK with a philadelphia roll because the salmon is normally steamed- yeah, they cheat because lets face it- Philadelphia rolls are not "real" sushi but they are soo good!! I think you'll be fine :)

You could also call the place you bought it from and ask... I would just ask if it was OK to eat... lots of them don't want you to know they steam it.

If the salmon is cooked, steamed, smoked, whatever, it might be safe. However, it will not be good. The seaweed will get soggy. So for safety if it's cooked, you are fine. For actual taste, it's probably not worth it.

Rice has only a few hours before it starts to harden... It will still be edible the next day but you will know the rice is harder than usual..

Philadelphia roll is often made with smoked salmon. It will probably not be spoiled, but it will taste pretty dried out.

If it was made with fresh, uncooked salmon, then it is not safe to eat.

i wouldn't. sushi only stays good for so long....and raw fish shouldn't be kept out for more than a day.
