There's plenty of things you can do! Learn to solve a Rubik's Cube if you don't already know, and if you do know, then practice! You could print off algorithms and stuff that will help you do it, and then teach yourself. You could also read a good book. There are plenty of really good books out there, and if you're reading the right one, time will fly by. Some books I liked are Catch-22, Digital Fortress, and Halo: First Strike. You could also meditate, I suppose. Maybe you could reach enlightenment. :) And, of course, there's also dozens of car games; Try to find license plates from every state, locate the letters of the alphabet in sequential order, 20 questions, and I spy. Or, maybe if you have clothes that need to be patched and the road isn't too bumpy, you could sew up your jeans or whatever. you could also buy a roll or two of duck tape and make clothes. Hats and ties are always fun, and wallets are pretty cool too. If you have a bunch of these, then you could sell them, and make money off of it! It only takes a few dollars to buy a roll of duct tape, and you could make at least 20 wallets from a roll, probably a lot more if you used it right, and then sell each wallet for $10-20 a piece, and make a lot of money. Of course, you would need some way of making the sales, and then delivering the wallet and receiving the money. Either way, I've found duct tape wallets to be better than any other kind, so you should make one for yourself. Of course, you could do any arts and crafts type stuff that you like, whatever it may be.
Another possibility, if you have the necessary items, is to play video games. If you like to play video games, then you could bring along whatever you want, and those tend to provide hours and hours of entertainment. Speaking of games, it's possible to buy a magnetic chessboard or monopoly game, and so you could play board games without them getting all messed up. Card games are a lot of fun too.
Probably the easiest thing to do would be to sleep. If you happen to be tired, you could fall asleep, and then wake up several hours later, and it would seem like no time has passed. Or, if you're driving with somebody interesting, you could always talk to them and have some interesting conversations. You could discuss politics, the weather, personal life, or whatever else you like to talk about.
You could also bring along a guitar or other instrument and make your own music. You could even do rigorous work-out sessions and get in really good shape. Just so long as somebody else is driving, you could sit in the back seat and do sit ups, push ups, or lift weights.
There are also plenty of things to do with just your brain. memorize something. Bring along a big map, and memorize every country in the world, or every road in the state, or whatever else is on that map. You could also print of the first few hundred digits of pi and memorize that. People are really impressed when you can rattle off digits of pi. It makes you look smart, especially if you already are. Really, you could memorize anything that suits your fancy. Maybe you're really into sports. Memorize all the players on your favorite team and whatever statistics go with that sport.
Yet another option is to organize your computer. If you happen to have a laptop with a bunch of stuff on it, and nothing is well organized, and you have a bunch of junk on it that you need to sort out and get rid of, bring along your computer and clean up the hard disk.
You could also write letters to all your family and friends whom you haven't seen in a long time, and then mail them once you get a chance. An alternative to that is to make a lot of phone calls, if you'd rather do that.
There's a lot of things you could do in a car, and hopefully this list gave you some good ideas.

I always enjoy just looking out the window. I love seeing the different landscape, buildings, people, etc. That's why I drive instead of fly. If its for kids, they are just going to fight the whole time anyway so it does not matter what you take for them to do. But you might take some books, crossword puzzles, number games. There are even magnetic chess and checker sets for use while traveling.

Mad Libs are always fun in the car...or the alphabet game, where u look for the letters a to z on billboards, license plates, etc. Also audio books can sometimes be fun in the car, if everyone agrees on one. I recommend any of the Harry Potter books on audio...the guy who reads them is awesome. I dont know if its just adults or if you have children...but when my sis and i were young we used to make friendship bracelets in the car on vacation, and we played alot of those travel games that are magnetic so you dont lose the pieces.
