The only "amusement" park is Arizona is called Castles & Coasters. It has 1 roller coaster and 1 roller coaster for kids. It's mainly a mini-golf course place. You can always wait for the State Fair to come around every October/November and they have plenty of rides then - but they aren't the safest.

Been to both in Texas and Fiesta TX in San Antonio is the better of the two. Mainly because the water park is included and built into the park. However the water park opens later in the afternoon and closes a little earlier. Right at dark for safety reasons. The water park in Arlington is great but is located across several lanes of interstate. It wasn't originally owned by Six Flags hence the inconvenient location. however if you are going in the fall or early spring either ones is great.

There are no amusement parks in Arizona. There is a place, like golf land where you play miniature golf and arcade games, and they have a couple of "roller coasters". I wouldn't waste my time or money to ride them. You would have more fun at one of the area resorts hanging out at their pool/water park area or maybe one of the local waterparks.
