some veggie ideas for all the family please?

me , my husband and two under 5s are fasting this week and will only eat foods not containing any animal products. please suggest some tasty ideas to satisfy us

    Well the only veggie my kids would eat when they were younger is corn. On the cob or off. And pork and beans . . .can't do that though, huh. Corn, hominy, squash. there's always mac n'cheese. A lovely twist on that by the way is to saute some onions and celery (really small diced) and fresh tomato (cubed) in butter or margarine, make your mac & cheese as usual (don't even need the milk really) and combine with the freshly saute'ed mixture and it is absolutely mm mmm good.

    Chili - make bean chili with tons of veggies and beans. Serve with cornbread and southern greens (basically spinach, collard, turnip and mustard greens that are cooked down with a bit of olive oil until they're greatly reduced in size, a huge heaping handful of fresh greens comes out to just a few spoonfuls, great for kids! My 13 month old girl loves greens!)

    Pizza (whole grain crust) with a roasted red pepper and tomato sauce and all sorts of great veggie toppings - including roasted artichokes, mushrooms, onions, green and red bell peppers, etc.

    Pita bread pockets stuffed with hummus, bean sprouts and other colorful veggies. If the little ones aren't into the hummus, you can fill the pita with a little peanut butter, raisins, apple and banana slices - yum!

    Here's a vegetarian meatloaf converter, just pick and choose ingredients. This isn't foolproof, sometimes you need to add more dry ingredients or add more wet ones to get the desired consitency, but this is amazing, 80% of the recipes I made from this are perfect. Animal product free and they're delicious!

    I assume, since you said animal products, you're avoiding dairy/eggs, not just meat.

    Stir fries are super easy - buy a bottle of teriyaki sauce, fry cubes of soy-sauce soaked tofu until crisp, fry up 3 or 4 cups of mixed, cut veggies, then add a cup of teriyaki sauce and mix it all up. Prep time, 20-ish minutes, cooking time, less than 5. Serve it with brown rice (the fibre and protein will keep you fuller, longer).

    Curries are easy, though may not be appreciated by your little ones. My favourite is chickpea curry.

    - Saute one medium onion with 1 tbsp curry powder, 1/2 tsp cinnamon, 1/2 tsp cumin, 1 tsp garlic paste, 1/2 tsp ginger powder, 1 tbsp veg oil

    - Add 3/4 cup salsa (easier than dicing tomatoes, chilies, and cilantro, imho) and 1 small can of drained chickpeas

    - Add 1/4 cup water, tomato juice or broth

    - Simmer 20 minutes, stirring every couple minutes, til the sauce thickens up

    I also love this vegan cream of mushroom soup. You don't need to use all the fancy mushrooms in it, just use button mushrooms and some dried ones from the produce section:

    Of course, the old standby foods are good as well - sandwiches, pizza with a little vegan cheese, spaghetti with tomato sauce (buy a packet of veggie ground beef or veg sausage and it'll taste fantastic), veggie burgers with a side of fries.

    Boil some vegetables and then put them with Pasta.

    Or maybe with Baked Potatoes.

    Make a vegetable curry, drop, onions, peppers, tomatoes, green beans, snow peas, mushrooms into a pan, add half a jar of salsa, preferrably the one with sweetcorn and black beans and then add some indian spices.

    Make a fruit salad on the side.

    Also make some smoothies out of fresh fruit.

    Try making pasta with tomato sauce: add TVP to the sauce. The texture is so much like ground beef most people won't even know the difference. Serve with garlic bread and a salad.

    Egg white omelete, serve with hash browns and toast.

    Boca burgers with fries.

    Hummus and pita bread.

    Pancakes, waffles, French Toast

    Mac-n-cheese, add Soy Knox or Smart Dogs for protein.

    Gardenburger Riblets, baked potato, brocolli (w/ lemon, margarine and garlic) and a salad.

    Pasta w/ marinara sauce, if you have Boca Itailan Sausages (vegetarian) cut them up and add it to the sauce. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down.

    Boca Sausages or even MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, brocolli, peppers, onions.

    Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can. Cut up celery add to the pot, add a little rice dream milk.

    To vegetarian refried beans add mild green sauce. Add cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top.

    Quorn turkey roast - use leftovers in soup -

    Vegetarian Chicken Noodle Soup

    6 cups of pure water

    ¾ cup Vegetarian Chicken Soup Base

    6 organic celery stalks, chopped

    1 ½ cups sweet onion

    6 carrots, chopped finely

    1 package organic noodles (rice, corn or barley)

    1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up)

    Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders.

    Buy some textured veggie crumbles and make sloppy joes, veggie chili or lasagna, they also make veggie "chicken fingers" which I'm sure the kids will love. Black bean burgers are great too. You can make any kind of veggie enchilada w/beans and rice.

    Tofu is lovely, especially fried! Put it in stir fries, it turns golden and crispy. If you freeze it, and while it's defrosting, add water, chopped up it makes a good alternative for bacon in pasta sauces. Or you could make vegetarian chili with kidney beans. Refried beans are good, too.

    roast root vegetables in the oven. Drizzle a little olive oil on and the roast. Use carrots, parsnips, beets, onions, potatoes. Season with seasoned salt and pepper.

    Wash and slice lengthwise some zucchini and yellow squash. Place them on a large sheet pan, drizzle with olive oil and season with salt and pepper, then broil them till brown(turning occasionally).
