Easy, healthy lunch recipes?

I have a microwave and refrigerator available. I'm tired of the same old things. Ideas?

    How about wraps?

My favorite is deli turkey or chicken with lettuce, tomato, avacado, cheese, and balsamic vinegar dressing. Yum!

    Cobb salad with ranch

Here is a sandwich site that might help:

  • For a healthy snack, make your own Trail Mix using a combination of any or all of the following:

    Dried cranberries

    Dried cherries

    Raisins

    Dates

Fancy Mixed Nuts - salted or unsalted, your choice

    Dried Mango

    Dried Papaya

    Coconut flakes

    M&Ms

    Banana chips

    Apple chips

    Dried Peaches

    Dried Blueberries

    Granola

Keep in a sealed container or ZipLock bags to keep fresh.

For healthy lunches, I like turkey, beef or ham with cheese and lettuce sandwiches or wraps made with tortilla shells - make your sandwiches on whole wheat or multigrain bread and use whole wheat tortilla shells - you can add sliced tomatoes and/or avacados to these; salads with the dressing on the side; homemade chicken, crab, shrimp or tuna salad using just enough Miracle Whip or mayo to hold the ingredients together; celery sticks, baby carrots, radishes, cucumber slices, cherry or grape tomatoes with some salad dressing on the side for dipping...

Take some shrimp. Cook them in Peanut sauce. You have to deshell them though lol. 2 mins in all really. Then take some frozen brussel sprouts and a steam bag and put butter and spices in and cook for how ever long you want. Then take out serve and add salt and pepper to sprouts (as much as you like) Then just save the bag by washing them lol. I do it works all the time saves money on bags too.
