Hello there, actually I am from Corozal living in FL USA, Looking forward to moving back to Corozal pretty soon...I love what you r talking about, the famous GUISHI, HAHA i JUST LOVE IT! OK, here is the recipe..Ingredients: potatoes, cheese, ham, tooth picks( you need to hold it) flour, sazon Accent( is the brand, hope u know what it is..) this is salty and give some color to the flour...

boil some water, add salt, put the potatoes boil them for 25-30 Min's, keep the skin, once is done peel the potatoes cut them in half, add cheese, ham put the other side of the potatoes back and put the tooth picks.

Preparing the flour in a bowl put the flour add water it have to be thick, now add some salt(optional) sazon (coloring) a bit of pepper(also optional) put the potato that you made with the cheese, ham, tooth picks inside the flour and then put it in the deep fryer...bon appetite! hope this helps...
