on a job app that im trying to fill out, the questions is: "List any organizations you are on or have been a member of (including Animal and non-Animal related) organizations:"
does this include things like school clubs or sports?

Yes, I would definitely mention the sports and clubs.
At my company, we like to see sports on the resume because it usually means that the person has teamwork skills.
And in clubs, you can demonstrate your leadership skills.
If you get an interview, the person can ask you questions about your involvement, which is a good chance for you to talk about your skills.
So there is no down side to mentioning them.
