Don't can the hummus. The heat needed to sanitize the product would ruin it. Freezing is the way to go.
Ideally, you would quick-freeze the hummus into blocks and then vacuum seal the blocks. A quick freeze takes just a couple hours in the freezer and gives a tougher "shell" so the block is not squashed as you vacuum. This helps preserve the shape and facilitates storage.
If you cannot vacuum seal, keep the hummus in a container that will not become brittle in the freezer, and put plastic wrap right down on the surface of it, so the hummus does not get freezer burn.
Thaw the hummus in the refrigerator at least over night.
