    Here is a nice fish pie ........ = )

    Fantastic Fish Pie

    6 large potatoes, peeled and diced into 1-inch squares

    2 free-range eggs

    2 large handfuls fresh spinach, trimmed and washed

    1 onion, finely chopped

    1 carrot, halved and finely chopped

    Extra-virgin olive oil

    1 cup heavy cream

    2 good handfuls grated mature Cheddar or Parmesan

    1 lemon, juiced

    1 heaped teaspoon English mustard

    1 large handful flat-leaf parsley, finely chopped

    1 pound haddock or fresh cod fillet, skin removed, pin-boned and sliced into strips

    Salt and freshly ground black pepper

    Nutmeg, optional

    Preheat the oven to 450 degrees F.

    Put the potatoes into salted boiling water and bring back to a boil for 2 minutes. Carefully add the eggs to the pan and cook for a further 8 minutes until hard boiled, by which time the potatoes should also be cooked. At the same time, steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze any excess moisture away. Then drain the potatoes in the colander. Remove the eggs, cool under cold water, then peel and quarter them. Set aside.

    In a separate pan slowly fry the onion and carrot in a little olive oil for about 5 minutes, then add the heavy cream, and bring just to a boil. Remove from the heat and add the cheese, lemon juice, mustard, and parsley.

    Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce. The cooked potatoes should be drained and mashed, add a bit of olive oil, salt, pepper, and a touch of nutmeg, if you like. Spread on top of the fish. Place in the oven for about 25 to 30 minutes until the potatoes are golden.

    Here's 2 of my recipes

    SMOKED FISH PIE

    6 to 8 Pieces Smoked Fish

    ½lt Cheese Sauce

    Mashed Potatoes

    Cover fish with milk & cook in oven for about 20 minutes.

    Make cheese sauce with milk fish cooked in

    Break up fish and add to sauce. Put into a casserole dish.

    Leave for about ½ hour.

    Put mashed potatoes over the top and put into oven (425°) for 30 minutes

    You can add some english mustard (to taste) to this dish as well

    SEAFOOD PIE

    1 lb Cod fillets

    ½ lb Prawns

    2oz Sweetcorn

    1 pint White sauce

    1lb Mashed Potatoes

    Poach the cod fillets in the milk for the white sauce

    Make the white sauce adding a fish stock cube

    Flake the fish and mix with prawns, sweetcorn and sauce

    Top with potatoes and cheese place under a hot grill

    These two are very good, and in my opinion, can look fancy

    Dijon Crusted Fish

    3 tablespoons reduced-fat mayonnaise

    2 tablespoons grated Parmesan cheese, divided

    1 tablespoon lemon juice

    2 teaspoons Dijon mustard

    1 teaspoon horseradish

    4 tilapia fillets (5 ounces each)

    1/4 cup dry bread crumbs

    2 teaspoons butter, melted

    In a small bowl, combine the mayonnaise, 1 tablespoon Parmesan cheese, lemon juice, mustard

    and horseradish. Place fillets on a baking sheet coated with cooking spray. Spread

    mayonnaise mixture evenly over fillets. In a small bowl, combine the bread crumbs,

    butter and remaining Parmesan cheese; sprinkle over fillets. Bake at 425° for 13-18

    minutes or until fish flakes easily with a fork.

    Peanut Crusted Orange Roughy

    4 fresh or frozen orange roughy fillets (6 ounces each), thawed

    2 tablespoons reduced-fat mayonnaise

    1/3 cup unsalted dry roasted peanuts, finely chopped

    1/8 teaspoon pepper

    CORN SALSA:

    1 cup fresh or frozen corn, thawed

    1/2 cup chopped green pepper

    1/4 cup chopped red onion

    2 tablespoons minced fresh cilantro or parsley

    1 tablespoon lime juice

    1 garlic clove, minced

    1/8 teaspoon salt

    1/8 teaspoon cayenne pepper

    Arrange fish fillets in a 13-in. x 9-in. x 2-in. baking dish coated with cooking spray.

    Brush the top of each fillet with mayonnaise. Sprinkle with peanuts and pepper. Bake,

    uncovered, at 450° for 10-15 minutes or until fish flakes easily with a fork.

    meanwhile, combine the salsa ingredients in a bowl. Serve with the fish.
