I don't make a single potato dish that requires peeling. We leave them on for mashed, potato salad, oven roasted, and scalloped. (We don't make fries at home.)
However, at Thanksgiving and Christmas, Mr. Maryn is in charge of the potatoes, and he peels them--and is smart enough not to complain when he gets the skins the rest of the year.

I have done this. After peeling place in water (make sure they are covered completely) and keep in frig until ready for use. The cold water will keep them from turning brown and also keep them firm.

No, I only have one potato left. I'll probably end up with fish fingers with pasta and sauce with sweetcorn. That's the early favourite anyway. I ought to phone my mum and ask if she's got any spare in her garden
