    Baked Porcupine Meatballs

  • 1 decade ago

I've never made them with Rice-a-Roni, but here's the recipe I've used for over 30 years.......

    PORCUPINE MEATBALLS

    1 lb. ground beef

    1/2 c. raw white rice

    1-1/2 c. water

    1/3 c. chopped onion

    1 tsp. salt

    1/2 tsp. celery salt

1/8 tsp. EACH garlic powder & pepper

    15 oz. tomato sauce

    2 tsp. Worchestershire sauce

Preheat oven to 350. Mix rice, meat, 1/2 c. water, onion, salts, garlic powder & pepper. Shape by teaspoon into balls. Place meatballs in ungreased 9" square pan. Mix together remaining ingredients and water & pour over meatballs. Cover and bake for 45 min; uncover and bake 15 min more .....serves 4-6
