It is NOT Mexico's Independence Day. Mexico's Independence Day is September 16th. The Battle of Pueblo happened on this day in which the Mexican forces defeated French.
People in the US also celebrate it for the culture/heritage of Mexico, similar to celebrating the Irish on St. Patrick's Day.

it's a mexican holliday, it's the day Mexican troops kick Napoleon III troops asses in a town call Puebla, very "machos"
