What are some tasty, healthy foods that are low in sodium?

My grandma is 80 and needs to cut back on sodium as well as have an overall healthy diet. However, she does have an appreciation for good food and I am looking to find dishes that she will enjoy. Preferably things that are simple to make and non-perishable or frozen.

    Here's a few ideas for you. In addition, if you are near a big city, libraries have many books on low sodium cooking. And certainly you can google or go to sites like recipezar or foodnetwork, too.

    lentil chili

    pasta salad with olive and julienned vegetables (or low sodium Italian)

    white fish with fresh salsa

    chicken breasts topped with diced vegetables and cheese

    fresh fruit cut in individual containers

    tuna pita pockets with lettuce and tomato

    grilled flank steak marinated in low sodium Tamari

    grilled vegetables skewers

    grilled tuna and vegetable skewers

    chicken satay with peanut sauce

    Some of the items above can be portioned out and frozen, too be reheated later. My mom likes Skyline Chili, so I buy the big tub and portion it out with spaghetti and freeze it, with cheese and onion pouches for the fridge.

    Here's the deal...most pre packaged foods (frozen dinners, canned soups, boxed side dishes) are loaded with sodium, because they use salt as a preservative. (some brands have low sodium options but they are still high compared to the real deal) So the moral of the story is....eat fresh foods. When you cook raw veggies and real meat, you can choose not to add salt. You can make food taste really good with seasoning and spices that have no salt. Some of my favorites, Ms Dash, Cumin and Garlic (not together). Use lemon juice and vinegar to add acidity and kick to chicken and fish. So remember buy "real" food and cook, even if it's just 3 or 4 nights a week. You can always eat left overs, or reinvent whatever you prepared. This will eliminate the sodium issue and improve Gmas health overall.
