I was thinking cheddar mashed potatoes, twice baked potatoes or scalloped potatoes were the first things that came to mind try www.allrecipes.com, they have some great ideas and you can search by ingredients, best of luck.
This is the ingredient search:

**EDIT** sorry, didn't know you were asking for a dip. If its dip, I would say it most likely some kind of mexican taco dip. I know a REALLY good one that is so easy and everyone asks me to make it for parties. Mix salsa, powedered cheddar (to taste), and sour creme. You can top with shredded cheddar in a regular bowl OR layer with lettuce, tomato and shredded cheddar and sliced balck olives on top.
Another kind of dipped is a baked dip. Place either canned or homemade chili on bottom of cassarole dish, Mix a little powdered cheddar cheese and creme cheese and soften a little in microwave, spread on top of chili. Top with shredded mexican cheese and bake in oven on 350degrees until cheese is well melted.
(These recipes are best when served with "scoops" tortilla chips as they are thick dips.)
Enjoy, I have used both recipes and they are DELICIOUS!

Give this a try, its something similar to something I ate this morning:
Fry up some tortillas, mix in your garlic powered and some pepper. Right about the end of 10 minutes, start mixing that cheddar cheese with a small amount of water and toss it into the tortilla mix. Add some enchilada sauce, cook till the sauce is warm, and serve!
Yum~!

Croutons !! Spray bread cubes with a butter flavored coking spray so the spices and/or cheese stick and bake in a slow oven (250 degrees) tossing often, for about an hour or until golden brown. Let cool completely and store in an air tight container.
