    VEGAN CHOCOLATE CAKE

    INGREDIENTS

    1 1/2 cups all-purpose flour

    1 cup white sugar

    1/4 cup cocoa powder

    1 teaspoon baking soda

    1/2 teaspoon salt

    1/3 cup vegetable oil

    1 teaspoon vanilla extract

    1 teaspoon distilled white vinegar

    1 cup water

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.

    Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.

    Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

    Welfare Cake "This cake is so moist that you would swear it was from a box!" Original recipe yield: 1 - 9x13 inch pan. INGREDIENTS: 3 cups all-purpose flour 2 cups white sugar 1/2 cup unsweetened cocoa powder 2 teaspoons salt 1 tablespoon baking soda 1/2 cup vegetable oil 2 tablespoons distilled white vinegar 1 1/2 teaspoons vanilla extract 2 cups water DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla. Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

    Actually, you can just add a can of diet coke to some chocolate cake mix, stir, and bake.

    No eggs, no oil, no milk, NOTHING- just the boxed chocolate cake mix and a can of diet coke. Then mix together and bake according to instructions. It sounds crazy, but I promise, it works. I do it all the time. You can also use diet dr. pepper, or whatever...it is moist, fluffy, and FANTASTIC:)

    also, for white/light cakes, use diet sprite.

    The bonus is, the cake has fewer calories:) Also, less ingredients means it cleans up quickly, and takes less time and effort.

    I'm not sure if this is VEGAN friendly (depends on your cake mix), but it is certainly vegetarian friendly.

    just look in a normal cook book. the ingredients are going to be flour, sugar, baking powder, salt, butter/margairine, chocolate, cinnamon... no chicken or pork or anything like that.

    hey for icing mix cream cheese with greek strained yogurt and jam or marmalade or something like that. yum yum. just make sure you eat the cake within a few days or icing will mold.

    unless you put meat in your chocolate cake a normal chocolate cake should be fine
