Cream Sauce Soya Mince Penne
Ingredients:
300g penne
A pinch of sea salt
1 tablespoon vegetable spread
1 cup soya mince
200g mushroom, sliced
1 cup vegetable stock
1 tablespoon tamari sauce
1 tablespoons corn flour
3 tablespoons olive oil
1 cup sour cream
1 cup milk
1 teaspoon dried corriander leaves
A pinch of freshly ground pepper
A handful of fresh basil leaves, rinsed
Preparation:
Cook penne with the sea salt in a pot of water following the instructions on the pack, strain, and butter it with the vegetable spread.
Mix the soya mince, tamari sauce and corn flour with the vegetable stock. Leave for about 1 hour.
Heat olive oil in a medium saucepan, stir in mushroom and sautee on medium heat for about 5 minutes.
Stir in the marinated soya mince mix, cook for another 5 minutes. Stir constantly.
Add in sour cream and milk, stir well and cook for another 5-10 minutes, or until sauce is thick.
Sprinkle the dried corriander leaves onto the cooked penne, heat it up in a microwave if needs be.
Pour sauce over penne, season with ground pepper and garnish with basil leaves.
Versatility Note:
You can of course, replace penne with any other type of pasta.
To make a vegan alternative, substitute sour cream and milk with soya yoghurt and soya milk respectively.
Crispy Deep Fried Soya Bean
Soya beans are more commonly used to process cooking ingredients such as tofu, soya flour, soya mince, etc. However, there are a few ways to cook the bean from its raw form. This simple, crispy snack can be made savoury or sweet. Great as a side dish with rice, or as a munchie on its own.
Ingredients:
500g soya bean
1 litre corn oil (actual consumption approx. 80ml)
A pinch of salt and pepper
Preparation:
Clean soya bean thoroughly, then soak for 3 to 4 hours.
Drain water completely when beans have slightly expanded.
Heat oil in a deep fryer (or a large wok) till it is nearly boiling.
Add in soya bean and fry on high heat till all beans float to the surface.
Scoop beans out and leave it in a strainer to drain excessive oil, before serving it in a bowl.
Sprinkle in salt and peppr, and mix slightly.
Serve when it is still warm.
Versatility Note:
To make it a sweet snack, simply replace the salt and pepper with some brown sugar and ground cinnamon or ground nutmeg.
You can also add the fried beans when cooking egg fried rice. Just add it in during the final stirring.
Sweet and Sour Soya Bean
Out of the cooking ingredients we buy during every trip to the market, quite a few are made of soya bean. For example tofu, soya flour, soya mince, etc. However, there are a few ways to cook the bean from its raw form, for example Crispy Deep Fried Soya Bean. Here is another simple dish that is great as a side dish with rice, or as an alternative to baked beans.
Ingredients:
300g soya bean
250ml tomato sauce
40ml olive oil
Pinch of Sea salt
20g brown sugar
1 teaspoon mixed herbs
Preparation:
Heat a saucepan and fry the soya bean (without oil), till it starts to fragrant.
Transfer it into a bowl of cold water, and soak till the beans have expanded and the husks start to crumple.
Strain completely.
Heat oil in the saucepan, stir in tomato sauce and fry till oil turns reddish.
Add in soya bean and 1 cup water.
Stir constantly till it is boiling, add in sea salt and brown sugar.
Cook on low heat till beans are soft, then increase heat again to reduce sauce to your preferred thickness.
Versatility Note:
You can, of course, alter the amount of tomato sauce and sugar according to your taste. Some people like it sweeter, but some prefer it more sour-ish.
This can also be served with a fried egg, for breakfast or lunch.

both are roughly the same except when it comes to protein. EVERY veggies include a respectable amount of protein; fresh fruit does not.
