Creamy vinaigrette dressing recipe? Anyone have a good one?
Either Cuisine Magazine or Bon Appetit Magazine published one between 1979 and 1981 and I used it for years, but alas, have completely lost the magazine it was in. Please help, because this was the best ever on Spinach Salad!

This is a recipe for a citrus vodka vinaigrette, I use it on home made pasta salad. but you can put it on anything you need to spice up.
6 large lemons
1/2 cup olive oil
1/2 cup dijon mustard
1/4 cup citrus-flavored vodka
salt
pepper
squeeze fresh lemons.
To yield about a cup of fresh lemon juice.
Add cup of olive oil, dijon mustard, citrus-flavored vodka.
The flavored vodkas are sweetened, so this ingredient takes the place of the sugar that usually goes into this dressing.
add some kosher or grey salt and fresh ground black pepper to taste, whisk throughly until a emulsion is formed.
If you need something with no alcohol try this one. Latin mushrooms vinaigrette ( you can use your fav. mushroom if you want)
1-1/2 pounds wild mushrooms sliced
1 teaspoon lemon zest finely grated
1/2 teaspoon freshly ground black pepper
2 teaspoons parsley finely chopped
2 teaspoons mint
2 tablespoons red wine vinegar
1/4 cup extra virgin olive oil
1-1/2 teaspoons granulated sugar
1 teaspoon salt
Place mushrooms in small saucepan and cover tightly.
Cook over low heat shaking pan frequently about 4 minutes until softened. Put into a blender and pulse 3-4 times with the remaining ingredients except for the oil drizzle it in slowly to make it emulsify. Marinate at least 2 hours before serving.

1/3 cup Balsamic Vinegar
1/3 cup olive oil
1T chopped fresh basil
2 t chopped fresh Thyme
salt and pepper to taste
