Salad for 40?

Alright for a work function I have been assigned to make a salad for 40 people. I'm at a loss as to figure out how much I need to make.

It is just your typical salad with romanine lettuce, red peppers, capers, onions, artichoke hearts, croutons, raisins and sliced baby tomatoes. Maybe some fresh motarella if I can find any in Taipei.

Normally when I make this 3 heads of lettuce is used for 4-5 people, but we are big salad eaters.

There will be a lot of other food there, so should I just make enough for 20 and hope for the best?

Any thoughts?

    If salad will not be the main course, then estimating on the low end is a good idea. If I were you, and I wanted to make sure the salad for 20 lasted through 40 people, I would make 2 batches and put them on the buffet one at a time. When it looks as though there is less, people in line tend to take less. And when half the people have gone through the line, you can put out a fresh, chilled bowl of salad.

    We had a company bbq this past Wednesday. There were over 150 people. We ordered two different salads from a catering deli. We had a fruit salad and a spinach salad. The spinach salad consists of spinach, strawberries, Gorgonzola cheese, celery, romaine lettuce, caramelized onions and freesia lettuce. It was served with different dressings. The salad was fresh and delicious. The first thing gone was the salad. There were two huge bowls of these two different salads. I would say probably 3-4 times bigger than a satelite dish. Since people are health conscious these days, it doesn't hurt to make a lot. However, I do agree that whatever tastes better at the party, will be eaten the most.

    Just remember if there's going to be other food people might go for the the best foods or meat. They would eat the salad if you serve it to them but if it's going to be like a buffet, try to make less than what you are thinking because you'll have plenty left.

    I dunno for a work function I would rather make too much than not enough. Don't want people missing out on your delicious salad!

    Try putting walnut shells in for added flavor, plus the people will choke to death and you wont have to worry about feeding them.
