Olive tapenade is delicious!
Almost anything with a sourcream base goes great with pita chips!

I was at a good restaurant recently and they had a yogurt, artichoke heart, spinach, olive oil dip on pita chips. It was fantastic. I'm trying to copy it.
The Greek dip referred to above is called tzedsiki.

baba ghanouj (roasted eggplant dip) or a tzatsiki, even mix up some sour cream with harissa. I like the the different hummus flavors (roasted red pepper & walnuts). Lemon artichoke dip. Any Mediterranean style dip/condiment will work.

CHEDDAR JALAPENO DIP
1/3 c Sour cream
1/3 c Mayonnaise
1/4 c Tomato; Finely chopped
1/4 c Extra sharp cheddar cheese;
-Finely shredded
2 Jalapeno chiles; seeded and
-chopped
2 tb Sliced green onions
in medium bowl, combine all dip ingredients except onions;
mix well. Sprinkle with onions.

Bacon clam dip from Whole Foods (Fresh Fields) is REALLY good with pita AND tortilla chips so eat up!

Hmmm, tough one, pretty much anything other than hummus will actually have flavor, so you've got lot's of choices. A lot of today's "wannabe gourmets" will disagree with me, but I like guacamole, or garlic and herb seasoned soft cheese. Or you can whip up a nice crab spread with a little mayo, cocktail sauce, crab and seasoning.
