Would a level 53 paladin with 290 stamina gain more health upon leveling up than a level 53 paladin with 289 upon leveling up. Assume the paladins have the same talents. I am asking because I want to know if I should start getting epic gear now rather than saving marks and honor for level 70

Each point of Stamina = 10 health.
You gain a set amount of stamina points when you level up. The amount of stamina points you gain is not determined by how much you already have. Take two paladins, same race & same level, will have the same amount of stamina and gain the same amount when leveling.
The only time it makes a difference is in gear and race. Gear improves the stamina amount and race alters how much stamina you gain per level.
