Use Ener-G Egg Replacer as an egg substitute (a mashed up banana also makes a pretty good egg substitute if you can't find Ener-G). If making from scratch, use a cake flour, such as Swans Down.
Without the eggs, it will have a more crumbly texture, but it will still taste good.

Do a google search for "wacky cake" recipes -- they are leavened using vinegar and baking soda, and are actually completely vegan! Here is the chocolate recipe, SOOO good, dust with powdered sugar or a light glaze!
* 1 1/2 cups unbleached all-purpose flour
* 1 cup sugar
* 3 tablespoons unsweetened cocoa
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon vanilla
* 1 teaspoon vinegar
* 5 tablespoons vegetable oil
* 1 cup cold water
Preparation:
In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened. Pour into 8 x 8-inch pan. Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched.

There is a blog site written by a lacto-vegetarian called www.goeggless.com. She has a good recipe on eggless chocolate cake. It is very interesting, the replacement again is white vinegar. She also has a very good muffin recipe.

There egg replacers out there that are vegan versions of eggs. One particular version I liked was Ener-G Egg Replacer [sources]. It's really great and can also be used for baking.
Also, here is a recipe for egg replacer [sources]. I've never actually tried it, but...it's worth a shot.

For milk, obviously, you can use soymilk.
To replace eggs, use 1/4 cup creamy silken tofu or 1/4 cup soy yogurt per egg needed. Muffins and pancakes and such can be made with flax seed (1 tbsp flax/3 tbsp water per egg) or bananas (if you like the flavor; 1/2 mashed banana per egg).

i'm vegan. i've got in no way heard of Pesco-Vegetarians or Pollo-Vegetarians. people who think of that the two of those are achievable, are regrettably incorrect. The platform of vegetarianism isn't eating meat. some might eat dairy or eggs. some will possibly no longer. None, even with the indisputable fact that, eat fish or fowl. it is using the fact those are the two residing beings and, for that reason, meat. [:

At meijers grocery store (I believe bigg's and other food markets have it too) you can get cake mix that is egg/dairy free. it's in the health section by the gluten free products.
