Could I substitute cake flour for all purpose flour?

I want to bake an angel food cake.

    You can easily substitute cake flour for all-purpose flour, or vice versa:

    • If your recipe calls for cake flour and you have only all-purpose flour on hand, you can substitute 1 cup minus 2 tablespoons all-purpose flour for 1 cup of cake flour.

    • If you need all-purpose flour and have only cake flour on hand, substitute 1 cup plus 2 tablespoons of cake flour for 1 cup of all-purpose flour. The texture will be different, but if you have no other choice, it's okay.

    All purpose flour as the name implies is good for general all purpose use. Most recipes for household are fine with all purpose flour because it would be to impractical for most households to keep a stock of bread flour, cake flour, pastry flour etc but do not expect to get PERFECT results. The cake flour in a recipe would result in a more tender and light crumb more like a cake than the chewier texture of a traditional donuts. I take it that your recipe calls for the donuts to be baked and your leavening agent is baking powder? If the donuts are to fried, I would think that all purpose flour would even be a better flour to use especially if you are using yeast in the recipe as most traditional recipes for donuts would call for.

    sure - cake flour will work great in an angel food cake.

    when you are mixing it - hold back about 2 T per cup of flour and see how it mixes up.

    I remember that you adjust between the 2 flour types by adding or subtracting 2 T. but i don't remember which direction it works.

    so hold the flour back, and add more later if you need to.

    Yes. Cake flour has less gluten in it and makes for a more delicate cake. However don't use cake flour for breads. You need the gluten for the right structure.

    Cake flour is the preffered flour for cakes, even angel food cake.

    to use AP flour instead of cake flour, use 1 cup minus 2 tablespoons AP flour for every cup of cake flour called for in the recipe.

    If a recipe calls for all purpose flour, then I would use that. Cake flour has sugar, and if you add sugar on top of that, it might be too sweet.

    absolutely. Cake flour, which is a low gluten flour, will give the cake its delicate texture.

    As far as I know, cake flour is sifted white flour. It may also have corn starch in it. I know powdered sugar does.

    Angel food cake = cake flour...... angel food is cake.
