Jailbreaking means it enables the user to download a selection of unofficial third-party programs. Some of these give the user more control over the iPod touch than is officially available, and also makes it work on Linux operating systems. Firmware versions 1.1.2, 1.1.3 and 1.1.4 can also be jailbroken. Servicing an iPod touch after jailbreaking or other modifications made by unofficial means is not covered by Apple's warranty.
1.1.1 and 1.1.2 or the version numbers for the ipod touch they go up as the ipod gets updated just like windows 95, 98, 2000, ME, XP etc..
I noticed that your asking about an apple product remember that if you need to know anything you can also go to www.apple.ca/support if your in canada and www.apple.com/support if your in USA you can also email them through the above apple support website.
Hope this helped you as much as possible. :) if it did please make it your best answer!
Remember to always use google or wikipedia they can help you find the answers to your questions.

Jail breaking an ipod touch means you make it so you can run applications like for AIM or games and stuff. 1.1.1 and other numbers like that are the software versions. There really isn't a need to jailbreak an ipod touch now because of the 2.0 software update. Before, apple wouldn't allow you to run other applications on it, so thats why people would jailbreak their ipods. Now apple is letting people do that with software update 2.0. Probably the only reason people would still wanna jailbreak is if they're too cheap to pay the $10 for the update. Even if you did jailbreak your ipod touch because you didn't want to pay the $10, there aren't many people developing apps for jailbreaked ipod touches. Most people are developing applications for the new version of the software so they can make money by selling them. If you want the update, you can update your ipod in itunes.
