Does alaska cabbage taste the same as early cabbage?
I guess what I really want to know is what can you do with it? How does it taste; bitter, strong, on the sweet side?????
Can I use it in Ham and Cabbage, or make coleslaw with it?

I'm not certain which kind of cabbage you are asking about. So here goes:
Skunk cabbage is just that. It's edible......but. It grows around standing water and is very prevalent in southeast Alaska.
The cabbage grown in the Mat-Su valley is bigger than those grown anywhere else. (Lots of day light) The taste depends on the soil and all I've had from up north has been sweet with a tang. I think last years cabbage that won at the state fair was about 60 lbs. (Sauerkraut heaven) We use it about the same as anyone else does.
