How can I capture video if my TV doesn't have TV out?
I've been looking for ways to convert TV to digital AVI files, and I found stuff about capture cards, however all of them require that I plug into a composite OUT jack or something similar. My TV only has S-video in, RCA in, etc. However we have a VCR that works and a DVD player that works too. Does anyone know what I can do when there are no "out" ports?

Go from the tv source (ex. satellite receiver, cable box, vcr, dvd player) out to the recording device. Plug from source to tv to setup everything visually and when playing from source, switch to recorder

I don't thing you can convert your favorite TV program from your TV. You need a TV tuner and a computer or a DVR to record the TV program and play back from your TV.
Your TV is a display device not capable to record anything at all, you need capture card + a storage device to store your TV program. So consider to buy a capture devices like TV tuner & capture card and use your computer as a recorder.
If you have VCR then you should able to record the TV program and play back on your TV. VCR use TV out to play back recorded TV program.
If you require to record digital AVI File, you need a computer to do it or I will rcommend you to take a look at these devices.
Both of them work beautifully to record TV program very easy and high quality.
