First, probably all extra virgin olive oils are organic as most olive trees are very old and found in places where synthetic farming is not so prevalent. Also to be classified as extra virgin, the oil must have no chemical treatment
I probably use 70% olive oil in my cooking/food prep (30% butter and other oils. Butter mostly in pastry preps) Probably because I grew up on the stuff (my Mom is a true blue Spaniard who prefers Arbequina derived olive oil) and I find it more versatile than butter. In fact, using olive oil is not limited to cooking. It has some practical cosmetic uses as well My wife rubbed olive oil on her tummy when she was preggo and it seemed to have prevented her from having pregnancy stretch marks
Health wise, olive oil does not have cholesterol. In fact it helps lower the levels of "bad" cholesterol" while helping increase the levels of "good" cholesterol. Some proof of this can be seen in regions like the Middle East where there is high consumption of olive oil but relatively few incidences of heart and coronary diseases even with comparative meat consumption.

Olive oil may have more fat than butter but they're different kinds of fat. Olive oil have more essential fats that you need to live. Overall, olive oil if healthier for you.

Olive oil is much better for you. It contains the good faty acids which help lower the fat and cholesterol stored in your body.
You want to stay away from butter as much as possilble. It does not contain the good fats.... that said margarine with hyrdogenated oils is the absolute worst! So when it comes to needing butter in something I recommend a margarine made from expeller pressed non-hydrogenated oils, such as smart balance or smart balance light... also good sources of the good fats.

Cold-pressed olive oil is best, but olive oil with sea salt is better for you.
Good fat is in olive oil such as polyunsaturated and monounsaturated fats.
Were the calories empty calories in the butter?

Olive oil is a polyunsaturated fat which is better for you than butter (a saturated fat). Butter has a stronger flavor, so I usually use 1/2 olive oil and 1/2 butter for cooking.

Unless you've been hiding under a rock for the last couple years, I'm sure you've heard of the Paleo Diet. Read here https://tr.im/GrTaR
I hate to even call it a diet, because it's really just the real way that humans have eaten for almost 1.9 Million years, as opposed to the modern-day processed food diet full of grains, sugars, and processed vegetable oils.
