You can't find a decent pancake recipe!? How hard is this? For just ordinary pancakes:
1 1/4 c flour
1 tbsp baking powder
1 tbsp sugar (I just use the regular, white, granulated kind)
1/2 tsp salt
Sift together.
1 beaten egg
1 cup milk or buttermilk (which will make it more sour)
2 Tbsp salad oil.
mix together. add dry ingredients. Mix until a bit lumpy, pour onto a hot griddle.
This is the important thing: make sure the griddle is good and hot. I set it at 350, and wait for it to heat up. I spray a little cooking spray on the griddle, and then drop about 1/4 c batter. When the top is a little bubbly, flip, and cook another minute or two.
serve hot with butter, syrup, cinnamon sugar, jam, whatever trips your fancy.

Use Krusteaz pancake mix. Follow the directions on box/bag and they come out perfect. Top with peanut butter and applesauce or sliced bananas and syrup and they're great.
