Does anyone have a recipe for Red Cooked pork? ?

kind of like the BBQ pork Chinese restaurants use in fried rice.

    I make this all time..but I don't go through the trouble of preparing it by scratch. To many ingredients to purchase.Go to your local Asian market and find a Char Siu marinade. Noh of Hawaii makes one. Marinade the meat in plastic bag at least 8 hrs or overnight, then grill or broil. It's delicious.

    RED COOKED SMOKED PORK SHOULDER 4-5 lb. smoke pork shoulder 1 c. sugar 1/4 c. soy sauce 1 1/2 c. tomato sauce Dash Tabasco sauce Simmer shoulder in boiling water (cover meat with water). Skim off any scum that may arise. Add 1/2 cup sugar, simmer 40 to 45 minutes. There should be less than half water in pot if not, pour out. In a bowl mix soy sauce, tomato sauce and Tabasco. Pour over meat, simmer until meat is tender turning meat to coat.

  • I think they use a prepared rubbing stuff?...either dry or in paste form from a catering sized jar?...but,be careful the chinese use a lot of sugar in their meat recipes!...and eat too much sugar?...you may have to change youre avatar to 'wide screen'...?...
