wheat, gluten, egg, peanut, sugar, corn free cake recipe?!?!?

I am in a bind. I am new to this Gluten free world. My husband is on an elimination diet and his birthday is August 31st. I want to bake him a birthday cake but he cannot have:

Wheat

Gluten

Soy

Corn

peanut (but he can have all other nuts)

Sugar (but he can have fruit sweeteners, agave syrup and brown rice syrup)

eggs (but I do have egg replacement)

dairy

I am at a loss. How can I make him something sweet and tasty for his birthday. Please help!

Nope, not impossible - just difficult. I developed a similar recipe for a little boy earlier this year, after much trial and error. Mine uses honey, but you can use agave instead, and it will probably taste better.

Start with Bette Hagman's original flour recipe:

    6 cups brown rice flour

    2 cups potato starch

    1 cup tapioca starch

    (Blend well)

1.5 cups brown rice flour blend

    1.5 tsp baking soda

    1/4 tsp cream of tartar

    1/2 tsp salt

3/4 tsp xanthan gum (if tolerated - will make a big difference in texture)

    1/2 -3/4 cup honey (I would use 1/2 agave)

5 tbsp melted dairy-free maragrine, or oil

    1 tsp vanilla

    1 tsp white vinegar

1 cup GF soy milk (Silk)

Bake 350 F for 30 minutes, in greased 8x8 pan.

    Good luck!

Sugar free Peach Jello with Cut up slices of fresh fruit in it

    Gel in Cake pan

Turn upside down , add candles

Your type of cake is far to difficult.

Impossible... how about an ice cream cake ( sugar & egg free, of course)? Oops, that's dairy...as I said, impossible! Enjoy!
