This is one of my fav's! Cheap, easy, & yummy:
Pumpkin Pie Cake
1 large (the fattest size can) can of pumkin pie mix
1 can of Evaporated milk (approx 14 oz)
4 eggs
1 box of yellow cake mix (white will do)
Mix pumpkin, milk & eggs in a bowl. Pour mixture into a 13 x 9 pan. Pour dry cake mix over the pumkin mixture. Gently fold the cake mix into the pumpkin mixture, leaving a bit of the dry mix showing on top.
Bake for 25-35 minutes in a 350 oven.
It’s best when served warm with whipped cream on top!!

go look for a book called the freezer cooking manual. They have some awesome desserts that are meant to be frozen. I make a peanut butter bar that is great. It tastes like buckeye candy in a bar form. they also have pecan pie muffins that are great. I just looked and they have a recipe for cheesecake that you can freeze until you need it too.
